Adding Sub titles to DVD?

Hey guys,
Maybe someone here can make some recommendations for me.I have some video files that i want to add subtitles in another language to.But i would like to make them optional like on most real DVD's i havent tried this before so i was wondering if it is possible and what software out there could i use to do this?I was reading some on hard coding subtitles that are permanently on but im saving that as a last resort.Any suggestions would be great :D thanks
