What software can achieve this? To my knowledge many of the standard versions of this type of software dont work under Server OS's.
Has anyone had success in creating an image?

Im sure 2k3 uses NTFS, so you should be able to boot with Ghost CD or disk and simply create an image to partition or CD. Now, it is something different if you want a windows GUI like DriveImage or Ghost Explorer.

I was looking for something like Drive Image, but this doesnt support Server OS's. Anyone have any suggestions? I dont want to have to stuff around with Ghost and Network card drivers...etc...

We use Ghost Boot Disk at work and create image of win2k3 ntfs onto FAT32 formatted HD. Easy. You can always view this Ghost Image inside windows with the Ghost Console Program.
To do this all you need is a win98 boot disk. Then get a another floppy disk and copy ghost executable to it. So boot with win98 diskette, then switch disks and a:\ghost.exe :D
